JCI

Japan Culinary Institute (JCI) was founded based on our experience as a study abroad program agent for more than four decades so that international students can learn authentic washoku.

The institute is affiliated with local restaurants in the Atami area and provides students with the advantage of learning a wide variety of dishes, including sushi, tempura, washoku, ramen, yakitori, and wagashi, Japanese confectionery.

Where is Atami?

Atami is located to the west of Tokyo, about 100 km or an hour away by bullet train. This hot spring resort is near Mt. Fuji and located on the seaside.

Well-known for its fresh seafood, such as horse mackerel, kinmedai (splendid alfonsino), squid, and whitebait, the town is frequented by tourists who enjoy food and hot springs.

Course Content

This two-week intensive course is designed for those who want to open a yakitori restaurant in their own country. Yakitori is a common Japanese dish and it seems easy to cook, but it requires profound knowledge and extensive practice to be a first-class yakitori chef, as the common saying goes, “Three years in skewering and a lifetime in grilling.”

In the first week, the students will learn how to use tools, the names of chicken sections, how to make sauce, how to grill chicken, and how to skewer it. In the second week, the lecture will cover the method of opening a yakitori restaurant, developing a menu including both yakitori and other dishes, and selecting sake and other alcoholic beverages to increase sales, along with an internship at a restaurant.

1st week

【Yakitori Professional Course】

· Introduction to yakitori cooking tools
· Lecture on the types and characteristics of yakitori, seasonings, and grilling
· Types of Yakitori cuts and vegetables, How to choose the type of meat and vegetables
· How to cut, skewer, and grill
· How to preserve ingredients
· How to make yakitori sauce
· How to prepare the grill, how to clean and maintain

2nd week

【Yakitori Restaurant Management Course】

· How to plan a successful Yakitori restaurant
· How to create a Yakitori restaurant menu
· Side dishes for Yakitori restaurant
· Training at Yakitori restaurants
· Tableware for yakitori, and how to dish up
· Making your own Yakitori dishes
· Lesson on sake and Japanese beverages in Yakitori restaurant

Language

There will be an English translator and you do not need to be fluent in Japanese.

After Ms. Maryam Alnusif completed Yakitori Course in Feb 2020, she opened a Yakitori restaurant named ‘BONJIRI’ in her home country Kuwait, and the restaurant has been selected one of the Middle East/North Africa’s 50 Best restaurants 2023.
