FZWC Ramen Course

FRONTIER ZIPANG WASHOKU CLASS (FZWC) is an innovative culinary school where students can learn practical skills at partner restaurants in Yokohama and Tokyo. The courses start from a 1-week period, in which professional Japanese chefs directly instruct students. Sushi course, izakaya course, and ramen course include unpaid internships and provide an opportunity to engage in the operating activities at Japanese restaurants.

Ramen Course

Course Content

This course takes place at Tombo, a ramen restaurant that specializes in abura soba (soupless ramen), in the Omori area, Tokyo. The lessons also include an internship where students will serve ramen at the restaurant.

The students in this program can learn how to cook original ramen with broth made of seafood, miso, and tonkotsu, including tsukemen (dipping ramen) and abura soba. The menu taught in the course can be also arranged in accordance with the students’ request.

Curriculum

– Orientation

– Preparation of soup (Tonkotsu or pork bone soup)

– Kaeshi or sauce to be mixed with ramen soup

– Preparation of chashu (Japanese braised pork)

– Preparation of toppings

– Making ramen with the soup you have prepared

– Side dish 1

– Tsukemen or noodles served with a separate soup to dip them in

– Aburasoba

Teruhiko Maita, often referred to as the ‘Iron Chef’ of our school, boasts a diverse culinary background with extensive experience spanning various genres, including yakitori, ramen, Japanese cuisine, sushi, izakaya, Western dishes, hotel dining, and Chinese cuisine.

Chef Maita is the head chef at Tombo, a renowned ‘aburasoba’ restaurant in Tokyo. ‘Aburasoba’ is an increasingly popular style of ramen known for its flavorful, oily sauce that coats the noodles and garnished with a variety of delicious toppings such as green onions, Chashu (Japanese braised pork), and seasoned eggs.

Chef Maita’s expertise in this unique ramen style is founded on a wealth of culinary knowledge spanning various cuisines. His creativity shines through in his ability to adapt and enhance traditional ramen recipes, offering a flexible and innovative approach to this beloved dish. Additionally, he has been featured on many TV and YouTube programs, showcasing his culinary talents to a wider audience.

In his spare time, he enjoys playing baseball.

FRONTIER ZIPANG does not own a dorm, so you need to find your accommodation with a hotel or Air BnB.
