In the past, Japanese restaurants in Poland served very little sushi, what they has was acquired through vendors in Germany. However, nowadays, tuna, salmon, eel, squid, and so forth are available through domestic suppliers.
Alcohol
Globally available brands of sake can be found at Asian grocery stores and high-end supermarkets, but other more authentic types of Japanese sake and shochu have not yet made their way to Poland.

Under the current immigration laws, foreigners have very limited opportunities to work in restaurants in Japan, you would need a working holiday visa, a spouse visas, or a type of special activity visa issued only to a few people.
