Rice
You can get US-grown Japanese rice at Japanese grocery stores, Korean grocery stores, high-end supermarkets etc. Japanese rice from California is commonly used in Japanese restaurants in India.
In India, some Japanese people and / or Companies have started producing Japanese rice on their own. They haven’t been able to achieve a stable supply yet, but you can occasionally purchase it at a relatively low price.
Soy sauce
You can get Kikkoman soy sauce at Japanese grocery stores.
Miso
You can get Japanese miso at Japanese grocery stores.
Seafood
Many Japanese restaurants import the seafood used for sushi and sashimi from Japan through import suppliers. That is; tuna, sea bream, squid, octopus, salmon roe, eel, amberjack, salted and vinegared mackerel, scallops, etc. Salmon mainly comes from Norway.
Tuna and salmon are the most popular sushi ingredients in India (as in other countries), but with the recent boom in Japanese food, there’s been an increase in the number of wealthy people seeking more varied types of sushi ingredients.
Alcohol
Although there is an increase in wealthy Indian people who are interested in Japanese sake, shochu, whisky and beer, the tariffs on imported alcohol are high, so these can only be purchased at a limited number of liquor stores.
Even in areas of India with many expat Japanese, only a few liquor stores carry Japanese alcohol and this is generally limited to one or two kinds of sake.
